Royal Baerii is a caviar extracted from the White Sturgeon, a native species of the Siberian rivers which drain into the Kara, Laptev and East Siberian seas. and is also native to rivers and lakes in Mongolia and China. Reaching up to 60 years of age, it weighs 200 kg and can be as long as 2m. It takes as long as 12 years for it to reach maturity before harvesting the first roe. The eggs are carefully extracted from the female sturgeon by hand, without harming the fish in any way.
Our partnerās farms recreate the natural habitat of the fish, carefully monitoring water quality and feeding to ensure the health and well-being of the sturgeon. This allows for a consistent supply of high quality caviar that is harvested while preserving wild sturgeon populations.
